Burrow Hill grow over 16 varieties of traditional perry pears selected over a thousand years for their delicate flavours.
In the autumn the pears are harvested and pressed. Once the first fermentation has finished the perry is bottled and the bottles are put into racks in their cellar for a year. Here it undergoes a secondary fermentation in the bottle. The necks are then frozen and the yeast disgorged. The result is dry, beautifully delicate, crisp and clean with tiny bubbles.
