Dragon Orchard in Putley is one of the most famous Cider apple orchards in the world and Little Pomona were fortunate to source Dabinett grown there . Part of this was allowed to ferment spontaneously, whilst they set the rest to ferment under different cultured yeasts. They then blended these parts, for once using more cultured yeast than wild, ageing it in a tank for a year before conditioning in the bottle.
The resulting Cider is a high toned juicy and intense expression of the apple, revealing itself in deep apricot and peach fruit, soft black tea tannins and gentle clove spice.
