Gilly is a new variety - both to Ross and generally, bred and then propagated in the 1990s. It's an early season light sharp, and this was Ross's first season fermenting it. This single barrel bottling of 300 bottles has Ross very excited for the future! Gilly makes up 90% of the juice, amplified by an addition of 10% Foxwhelp, in this cider of roaring acidity and fruit, tempered with the fermentation in the ex-Raison d'Etre barrels. A delight to drink, with flavours zipping across your palate.
