This is the second vintage of Ross-on-Wye’s ‘reason for being – quintessential expression of cider making’. Their philosophy in a single cider; clean, ripe, bittersweet apples wild fermented in an oak cask, matured patiently and quietly, and bottle conditioned. Given the natural process of cidermaking, the similarities in flavour between the two editions are remarkable. However this 2017 vintage benefits from more spice, a touch more smoke, and less alcohol.
