Babouche is a blend of 55% Dabinett, 15% Chisel Jersey and 30% Browns Apple. Fermented with wild yeasts in stainless steel, bottle fermented and aged for 12 months on lees before hand disgorging. Babouche is dry but soft with rounded tannins and aromas of orange flesh, leather, spice and autumn orchard.
