The very biennial Abbot's Leigh orchard had an on year in 2020 and wilding had lots of beautiful Stoke Red fruit to work with. This is a single orchard, single variety cider made in the rural method to keep residual sugar which is balanced by the high acid and full astringent tannins to give a beautifully poised drink. There is a light sparkle. This drinks very well with fresh cheeses and with apple crumble, or afternoon tea. Classic Stoke Red aromatics - roses, strawberries and cream, red apple. The acid is high quality and the tannin is a very fine, mouth-filling astringency.
